• Dans la société grecque où la consommation de viande est rare, il est naturel que le lait soit omniprésent et réponde aux besoins journaliers du paysan comme du citadin. Mais malgré son importance dans la vie quotidienne, le lait est aussi dans l'imaginaire grec la nourriture des barbares, voire des monstres Galactophages. C'est cette ambiguïté que cette recherche tente d'explorer : on verra que même si elle est la première nourriture obligée des hommes, des héros et même des dieux, jamais le lait n'accède chez les Grecs*à ce degré de fascination et de vénération qu'il a pu atteindre chez les Orientaux.
