The vineyard of Gaillac is particularly illustrative of a fast development of the organic production participating in a repositioning of the whole vineyard. How do the organic producers consider their wine? How do they contribute to revitalize the market of wines of Gaillac and, in so doing, how do they participate in the rearrangement of what makes resource in this territory? In front of these questions, on one hand, the theory of conventions help us to specify the various categories of organic producers. On the other hand, the studies on the territorial resource allow us to specify the current territorialisation of the wine production and the participation of the organic wine in a recombination of various types of resources.
