The search for competitiveness is a major concern for the out-of-home catering (OOH) sector, which has to evolve in a dynamic and uncertain environment. The supply constraints of the catering industry are at the heart of this research proposal, which aims to explore collaborative logistics. The aim is twofold: firstly, to determine the needs, expectations and constraints of the restaurant/supplier couple, and secondly, to envisage logistics solutions. The methodology is based on a case study. Two phases of qualitative research, based on a state-of-the-art report and 20 semi-structured interviews, were carried out. Analysis of the results, together with a benchmark, enabled us to identify the obstacles to local sourcing. Four types of solution were proposed: group purchasing, group supply, optimising deliveries and sharing information.
