The competition between small scale enterprises and big firms builds fundamently upon products strategy and marketing behaviour. In the matter of butcher's trade and baking, technical and commercial innovations have led since 1965 to a quick growing of firms operating on an industrial scale. Craftsmen have adjusted themselves to this high competition by improving new individual or joint strategies in the field of marketing.
