Résumé 0

‪A vegan diet is a dietary pattern that excludes all animal products. From a nutritional perspective, an increased consumption of plant-based foods has some advantages including a higher intake of potassium, magnesium, vitamins C, B9 and E, fibres, carotenoids, and polyphenols. However, it is also associated with a major risk of vitamin B12 deficiency, in addition to deficiencies of vitamin D, long-chain omega-3 fatty acids, calcium, iron, zinc, and iodin. In terms of health, a vegan diet decreases the cardiometabolic risk but greatly increases the risk of osteoporosis and fractures. A vitamin B12 deficiency can also lead to severe neurological, psychological, and haematological disorders. Pregnant and breastfeeding people, infants, adolescents, and elderly adults therefore should be advised against adopting vegan diets.‪
