Nach vierzigjährigen Kriegswirren erscheint das Land von Fanjeaux als ein guter Ausgangspunkt für eine Betrachtung der Landschaften des Lauragais. Die Quellen gräflichen (encours) und königlichen (Liber Reddituum, nach dem Recht der toten Hand behandelte Güter) Ursprungs zeigen eine grosse Stetigkeit der Agrarstrukturen zwischen 1250 und 1340, gestatten aber, den Rückgang der lehnsherrlichen Abgaben genau zu datieren, der sich zwischen 1250 und 1270 abzeichnet.

After 40 years of war troubles, the territory of Fanjeaux seems like a good viewpoint from which to observe the Lauragais countryside in the the second half of the 13th century. County and royal documents (encours, Liber Reddituum, redemptions) show great stability in land holding between 1250 and 1340. They also permit the precise dating of the fall in seigneurial levies that began between 1250 and 1270.

Après quarante ans de troubles guerriers, le terroir de Fanjeaux apparaît comme un bon observatoire des campagnes lauragaises. Les sources comtales (encours) et royales (Liber reddituum, amortissements) montrent une grande stabilité des structures agraires entre 1250 et 1340, mais permettent de dater avec précision la baisse du prélèvement seigneurial qui s'amorce entre 1250 et 1270.
