Le jeûne se développe en Russie après l'adoption du christianisme, en 988. Au 19° siècle, il est pratique répandue dans toutes les couches de la société. Très différent selon les régions, il reste néanmoins attaché à une double signification physique et spirituelle. Mais la révolution de 1917, bouleversant coutumes et rites, tend à effacer la dimension morale et spirituelle du jeûne. A l'Eglise orthodoxe et à la science d'en rappeler les fondements.
