In 1930, the total number of goats in the country was 1,675,400 head. In 1964, the number of animals was no more than 1,041,600, but the milk production had progressed. After studying the geographical distribution of these animals, whose rearing area forms a crescent stretching from Aunis to Languedoc, the author talks about the methods of rearing. Three main breeds dominate : the Alpine chamois breed, the Poitvin breed and the Saanen breed, of Swiss origin. Three types of rearing can be observed : meadow rearing, rearing on common land, and free range grazing or on other people's land. Finally we have the study of the commercialization of the products resulting from goat-rearing, particularly that of goats' milk cheese whose varied production is rather irregular.

En 1930, le troupeau national caprin comprenait 1.675.400 têtes. En 1964, le nombre des animaux n'était plus que de 1.041.600, mais la production laitière avait progressé. Après avoir étudié la répartition géographique du troupeau dont l'aire d'élevage a la forme d'un croissant s'élendant de l'Aunis au Languedoc, l'auteur traite des modalités de l'élevage. Trois races essentielles dominent : la race alpine chamoisée, la race poitevine et la race de Saanen d'origine suisse. Trois types d'élevage peuvent être observés : l'élevage en prairie, l'élevage utilisant les communaux, le pacage en libre parcours ou « sur autrui ». C'est enfin l'étude de la commercialisation des produits de l'élevage caprin, en particulier du fromage de chèvre dont la production variée est assez irrégulière
