There is a double origin to garum in Pompei : first, there is the type produced on the spot which is well known through literary and epigraphic sources and more specifically in A. Umbricius Scaurus' s pharmacy and which was locally circulated in the urcei ; then there is the kind that comes from the Iberian Peninsula in amphoras bearing painted inscriptions indicating the name of the products, the carriers (mercatores), the producers and lastly of the consignees. Local and overseas trade seem to have been complementary.

Le garum à Pompéi a une double origine : il y a d'abord celui qui est fabriqué sur place, bien connu par les sources littéraires et épigraphiques, en particulier, dans les officines d'A. Umbricius Scaurus, et diffusé localement dans les urcei ; il y a également celui qui vient de la Péninsule Ibérique dans des amphores portant des inscriptions peintes. Ces dernières nous font connaître les produits transportés, les noms des transporteurs (mercatores), des producteurs ainsi que ceux des destinataires. Commerce lointain et commerce local paraissent complémentaires.
