L'engouement de la seconde moitié du XVIIIe siècle pour les questions agraires, et plus largement pour les sciences de la nature se retrouve dans les principaux plans d'enseignement de la période révolutionnaire et dans un certain nombre de projets pour la création d'établissements spécifiquement destinés à l'enseignement de l'agriculture et de l'histoire naturelle. Les réalisations furent toutefois peu nombreuses. L'agriculture disparut rapidement des programmes des écoles centrales et il semble que l'enseignement de l'histoire naturelle y soit resté, sauf exception, assez théorique. Au niveau supérieur, on ne peut parler d'établissements nouveaux, puisque le Museum d'histoire naturelle et les écoles vétérinaires sont des institutions héritées de l'Ancien Régime. Un certain nombre de propositions, en particulier celles faites alors par Béthune-Charost, ont cependant sans doute inspiré les initiatives qui se sont multipliées à partir des années 1820-1830 pour le développement de l'enseignement de l'agriculture.
