El patrimonio industrial relacionado con el aceite de oliva ha tenido una gran relevancia a lo largo de la historia en la región de Extremadura, España. En el norte de esta región existe un importante legado cultural de propiedad privada y pública, que debe ser inventariado y catalogado para su estudio y puesta en valor. Los escasos estudios realizados nos remiten a Madoz en el siglo XIX o a los inventarios realizados recientemente por la Junta de Extremadura. El presente artículo describe, a partir del estudio de estas fuentes, la realidad de los elementos de patrimonio industrial oleico relacionados con el aceite puro de oliva de la variedad Manzanilla Cacereña, a partir de su estado de conservación y uso.

The industrial development related with the olive oil has been very important through the history in Extremadura, Spain. In the north of this region there is an important legacy both private and public, which must be inventoried and classified to be studied and carried out. There have been few studies that follow us to Madoz in the twentieth century or the inventories that Junta of Extremadura has recently done. This article describes the reality of the elements of the industrial heritage related with olive oil (Manzanilla Cacereña) from its state of preservation and usage.
