This contribution presents the results of the study of animal remains dating from the 14th century, discovered during the archaeological excavations of the chaplaincy of Saint Gilles de Surgères . The case of Surgères demonstrates that the characteristics of the bony ensembles do not depend on religious communities alone. They are necessarily linked to the quality of the guests attending the establishment.
