On a souvent affirmé qu'il n'y avait pas de tradition hydraulique en Afrique. L'irrigation "moderne", conçue par les ingénieurs et nécessitant l'intervention de l'État, a occulté la diversité des agricultures paysannes. Un retour anthropologique sur le "fait technique" permet d'identifier trois lignées techniques : le stockage de l'eau dans et sur le sol, l'exhaure et ses aménagements fonciers, les systèmes gravitaires. Ces trois types d'agricultures hydrauliques sont implantés sur les lieux d'anciens berceaux agricoles et furent souvent à l'origine d'un commerce de grains à l'époque précoloniale.
