Gleïzès, a philosopher close to the Meditators and the Dormeuses, wrote a pioneering epic of the vegetarian movement set on the Montagne Noire in south-west France. With this book in hand, Louise Hervé and Clovis Maillet set out to meet market gardeners and vegetarians in the region in 2023, the day after a major demonstration against the construction of the Toulouse-Castres motorway. Their rallying cry was: “Less macadam, more vegetables”.
