Favoring short food supply chains, open-air markets are part of the communication on the attractiveness of cities. In Caen, as elsewhere, markets are dynamic and vary in size (from 5 to 400 exhibitors). They appear as differentiated social spaces. The proposed offer often reflects the characteristics of the populations that frequent them.
